Setting the Table – Sabzeh

“They will come from east and west, from north and south, and recline at the table in the kingdom of God.” (Luke 13:29)
The first item on our Haft Seen table is سبزه or sabzeh (pronounced sæbzee). The Persian word can mean brunette hair, the color green, or grass. In regards to Nowruz, sabzeh specifically refers to green sprouts growing in a dish. These shoots can be wheat, lentil, mung bean, or barley.
Sabzeh symbolizes rebirth and abundance. Some families grow their own sabzeh over a period of 2-3 weeks leading up to Nowruz.
They prepare the seeds by soaking them in water then covering the seeds with a wet towel or napkin. After a few days, the seeds begin to sprout and soon grow long, dark green shoots.
As the Persian New Year approaches, pray for the Holy Spirit to prepare an abundance of souls, a harvest ready for the Gospel.
